    If you love chewy chocolate chip cookies, then you need to give these bar cookies a try. They have all of the flavor and texture you love and are so easy to make in a 9x9 inch baking pan! 

    Cookie bars are great to make when you want to make a sweet treat. They have all of the same chewiness and flavor but no need to roll out individual cookies.

    This is a great recipe to have on hand when you want to make a treat without a lot of work. It comes together fast and requires just a few ingredients. Plus, you can make it in 9 x 9 in pan. 

    I like to make this during the week to have whenever a cookie craving strikes. You'll love that you can change out the chips and customize the bars to your liking.

    Ingredients

    Ingredients include flour, egg, butter, and sugar.
    • Chocolate Chips: use one cup chocolate chips. You can use semi sweet chocolate chips, chocolate chunks, or milk chocolate chips. You can also change up the flavor and use white chocolate chips or a combination. 
    • Butter: you'll need one stick of room temperature unsalted butter. 
    • Brown Sugar: brown sugar adds rich flavor to the cookies. You can use either light brown sugar or dark brown sugar.
    • Sugar: regular granulated sugar helps to sweet up the bars. 
    • Egg: you'll need just one large egg. 
    • Vanilla: vanilla extract adds great flavor. 
    • Flour: all purpose flour works best. 
    • Baking Soda: make sure you are using baking soda and not baking powder. 
    • Salt: kosher salt is best for baking. 

    How to Make Chocolate Chip Cookie Bars in a 9x9 inch pan

    These easy-to-make chocolate chip bars cook fast in a square baking pan. To start, preheat the oven and grease and line your baking pan with parchment paper; set aside. 

    Step 1: mix wet ingredients

    Butter, sugars, egg, and vanilla mixed in a glass bowl.

    In a large bowl or stand mixer, use an electric mixer to mix together the butter and sugars until light and fluffy; about 2 minutes. Add in the egg and vanilla and mix until well combined. 

    Step 2: mix in dry ingredients

    In a separate bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients into the wet and mix with hand mixer on low speed until just combined.

    Pour in the semisweet chocolate chips and use a rubber spatula to mix, scraping down the sides of the bowl, until all of the ingredients are well combined.

    Transfer dough into the prepared pan and press into pan. Bake on center rack in preheated oven for about 20-22 minutes, or until the center of the bars is set and they are golden brown. Let cool on a wire rack completely, then cut into squares when cool. 

    Store leftover chocolate chip cookie bars in an airtight container at room temperature for three days or refrigerate for up to a week. 

    Recipe Variations

    You can easily change up the flavors of these simple chocolate chip cookie bars! Plus they are so much easier to make than regular cookies. 

    • Use different flavors of chips like: butterscotch chips, white chocolate chips, or dark chocolate chips.
    • Sprinkle on flaky sea salt one the finished bars. 
    • Add half a cup of chopped nuts, like walnuts or pecans, to the batter. 
    • Serve with a scoop of vanilla ice cream.

    Tips for Making Chocolate Chip Cookie Bars

    • Use room temperature softened butter.
    • Mix the butter and sugar together until light and fluffy. This extra step will give the bars the best texture. 
    • Weigh the flour for accurate measurement. 
    • Make sure the bars are completely cooled before cutting. To get clean cuts, remove from pan by parchment paper and use a sharp knife to cut into squares. 
    • Store leftover bars in an airtight container to keep fresh.

    Ingredients
      

    • ½ cup unsalted butter, softened
    • ½ cup brown sugar, packed
    • ¼ cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla
    • 1 cup all purpose flour (135 grams)
    • ½ teaspoon baking soda
    • ½ teaspoon salt
