How to Make Funfetti Cookies with Cake Mix
Cookies don't get any easier or more delicious then this Funfetti Cookie recipe! You can find funfetti cake mix in the baking aisle of most grocery stores. I like to top these cookies with frosting for a festive treat, but they are just as delicious without the frosting.
Preheat oven to 375 degrees. Line two baking sheets with parchment paper; set aside.
Step 1: make batter

In a large bowl, combine the cake mix, oil, and eggs. Use a wooden spoon to mix together the ingredients until well combined.
The ingredients should be smooth and evenly distributed. Make sure the egg is especially well incorporated into the batter.
Step 2: shape dough and bake

Use a cookie scoop to measure out even amounts of dough. Roll the dough into balls and place on prepared cookie sheets, leaving about 2 inches between each cookie (you should be able to fit a dozen cookies per sheet).
Press the cookie dough balls down slightly to flatten. This will give the cookies are more uniform shape.
Bake on center rack of preheated oven for about 7-8 minutes, or until the edges of the cookies are light golden in color. Let cool on wire cooling rack.

These cookies are loved by ALL! Funfetti cake mix, the best, but other box cake mixes- terrific also. But my addition , to top them off, I use Cream Cheese frosting tub. As is, spreaded, is lovely, adds a great addition to the cookies. But. Work a little more and melt(do not over heat, maybe 20seconds) the cream cheese frosting in a paper cup, fold the cup to pour lightly onto hot cookies to create a glaze. Work quickly, don't put too much on cookies. Delish.
