A fun and easy recipe that's perfect for breakfast or snacking.
It's easy to customize with your favorite fruits and flavors.
Ingredients You Need
- Coconut yogurt: You can also use either plain yogurt or Greek yogurt.
- Granola: Adding granola gives the yogurt bars some added depth.
- Coconut oil: Mixed with the granola to make the base of the bars. You can also use butter in place of the coconut oil.
- Strawberries, blueberries and raspberries: You can use any fruit you like - frozen or fresh, cut into bit size pieces.
Step-By-Step Instructions
Step 1: Line a rimmed baking sheet with parchment paper; set aside.
Step 2: In a large bowl, mix together the granola and coconut oil until fully combined. To form the granola base, pour the mixture onto the baking sheet and press into the bottom. If the mixture is well combined, it should stick firmly to the bottom. If not, you can add more coconut oil to the mix and repeat the process until it works.
Step 3: Pour the yogurt over the granola base and spread over the granola base using a wooden spoon.
Step 4: Place the berries evenly over the yogurt. If desired, sprinkle additional granola over the top for a little more crunch on the top.
Step 5: Place the sheet in the freezer for at least 3 hours. Once frozen, cut into 16 bars.
Tip: Remove the sheet from the freezer 10 minutes before cutting or eating the frozen breakfast bars. It will be easier to cut into bars, and the taste will also be better.
