Ingredients
- All-purpose flour: Use regular all purpose flour here. Cake flour or GF flour can be used as well.
- Granulated sugar: White sugar adds the sweetness you need. You could use a combination of granulated and brown sugar.
- Baking powder: Make sure you are using baking powder and not baking soda.
- Salt: I like to use kosher salt for baking.
- Milk: Use either whole milk or 2% for best results. Skim milk or a milk alternative work too.
- Vegetable oil: Vegetable oil or canola oil work.
- Eggs: You'll need two large eggs.
- Vanilla extract: Use a bit of vanilla to sweeten up the strawberry cream cheese muffins.
- Fresh strawberries: Use fresh strawberries. Measure the strawberries after they have been diced.
- Cream cheese: Creates a creaminess in the batter to make the muffins extra soft and tender.
How To Make Strawberry Cream Cheese Muffins
Strawberry Cream Cheese Muffins are a delicious treat to make whenever you have strawberries on hand. First you'll need to preheat your oven and line muffin tins with cupcake liners; set aside.
Start by dicing the strawberries into small pieces. Blot with a paper towel to remove any excess moisture.
Step 1: Mix Dry Ingredients. Firstly, in a medium bowl, whisk together the flour, baking powder, and salt; set aside.
Step 2: Mix Wet Ingredients. In a separate large bowl, combine the cream cheese, oil, sugar, eggs, milk and vanilla. Use an electric mixer to mix the ingredients until they are well combined and fluffy.
To the bowl, add in the dry ingredients and mix until the batter is just combined. Be careful not to over mix.
Step 3: Add the Strawberries. Then, toss the diced strawberries with a tablespoon of flour. Then, pour the strawberries into the muffin batter and use a rubber spatula to mix.
Step 4: Bake. Use a muffin scoop or ice cream scoop to pour the batter into the muffin cups. You should get 12 muffins total.
At this point, you can top with the muffins with extra diced strawberries if desired. You can also add a streusel to the top if you'd like.
Bake muffins on the center rack in preheated oven for about 20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. You're going to love these delicious muffins!
Recipe Tips
- Fresh, ripe strawberries will provide the best flavor and texture. You can use frozen defrosted strawberries if needed but be sure to dry well before using.
