    It’s so easy to make with simple mixing, and the cake layers bring out all the cinnamon cake flavor. Plus, it's a great way to pay homage to your favorite cereal flavor!

    The cake is made using cake mix. Once baked, the top is covered with both vanilla pudding and whipped topping. 

    Finish off your cake with a sprinkle of cereal for a delicious and fun treat that everyone will love.

    Ingredients and Substitutions 

    Ingredients for recipe include egg, cereal, milk, and oil.
    • Cake mix: If you can find Cinnamon Toast Crunch cake mix that would work great as the base for the cake. You can also use a vanilla cake, white cake or yellow cake mix. Here, I'll show you how to make it with yellow cake mix. 
    • Water: Adds moisture to the cake batter.
    • Vegetable oil: Contributes moisture and richness. You can also use canola oil. 
    • Eggs: use large room temperature eggs. 
    • Instant vanilla pudding mix: Vanilla pudding mix can be found in the baking aisle of your grocery store. 
    • Milk: Combined with the instant vanilla pudding mix to create a thick and luscious pudding. I like to use 2% or whole milk. 
    • Cream cheese frosting: Adds a rich and tangy flavor. You'll want this at room temperature.
    • Cinnamon Toast Crunch cereal: A half cup Cinnamon Toast Crunch provides a crunchy and flavorful topping for the cake. You can also crush some up to use in the body of the cake. 
    • Cinnamon: Adds additional cinnamon flavor and a hint of warmth.

    How To Make Cinnamon Toast Crunch Cake 

    Cinnamon Toast Crunch Cake is an easy to make moist cake with a creamy pudding topping. To start, preheat the oven to 350 °F and grease a 9x13-inch baking dish with cooking spray. You can also line with parchment paper.

    Step 1. Make cake batter

    In a large bowl, mix Cinnamon Toast Crunch Cake Mix (or yellow cake mix), water, vegetable oil, cinnamon, and eggs. Then, beat for 2 minutes with a hand mixer until well combined. If desired, stir in 1 cup of crushed cereal to the batter. 

    Pour the batter into the greased baking dish. Bake according to the package instructions (25-28 minutes). Let cool on a wire cooling rack. 

    Step 2. Poking holes 

    ​Poke holes into the cooled cake using the end of a wooden spoon or spatula.

    Step 3: Vanilla pudding

    While the cake is cooling, whisk together instant vanilla pudding mix and milk. Then, pour the vanilla pudding over the cake and spread it evenly.

    Step 4. Frosting: Microwave the cream cheese flavored frosting for 20-25 seconds. Then, stir in a teaspoon of vanilla extract (optional). Pour the frosting over the pudding layer and gently spread it over the cake.

    Lastly, sprinkle cereal pieces over the entire cake. Sprinkle ground cinnamon over the top of the cake.

    Refrigerate the cake for about an hour before serving.

    • Betty Crocker Cinnamon Toast Crunch cake mix is great to use if you can find it. You can substitute yellow cake mix and add crushed cereal into the batter. 
    • Don't wait too long to pour the pudding on to the cake. You don't want it to set.

    • 9 x 13 inch baking pan

    Ingredients
     
     

    • 16 ounces yellow cake mix *see notes for variations
    • 1 cup water
    • ½ cup vegetable oil
    • 3 eggs
    • ½ teaspoon cinnamon
    • 1 cup Cinnamon Toast Crunch cereal, crushed
    • 3.4 ounces instant vanilla pudding mix
    • 2 cups milk
    • 16 ounces cream cheese flavored frosting (like Betty Crocker)
    • ½ cup Cinnamon Toast Crunch cereal
    • ¼ teaspoon ground cinnamon

    Instructions
     

    • Preheat oven to 350°F. Grease a 9x13-inch baking dish. Set aside.
    • In a large bowl, add the cake mix, water, vegetable oil, eggs, and cinnamon. Use a mixer or whisk and beat for about 2 minutes until all ingredients are combined. Fold in the crushed Cinnamon Toast Crunch cereal.
    • Pour batter into a greased baking dish. Bake according to the directions, for about 25-28 minutes. Once the cake is done, let cool completely on a wire cooling rack.
    • While the cake is cooling, make the vanilla pudding by combining the mix with cold milk and whisk.
    • Poke some holes into the cake using the end of a wooden spoon. Pour the pudding over the cake and spread.
    • Remove the lid and foil from the can of frosting and microwave the can for about 20-25 seconds, just until you can stir it. Slowly pour the frosting over the pudding layer and spread over the cake. Top with the cereal pieces.
    • Allow the cake to sit in the fridge for about an hour before serving. Enjoy!

    Notes

    *Betty Crocker Cinnamon Toast Crunch cake mix is great to use if you can find it. Otherwise, use your favorite boxed white or yellow cake mix.
